Crispy duck bites with mint and clementine

We are in love with Jamie Oliver recipes, and today we bring you another amazing recipe to surprise yourself. These delicate crispy duck bits seasoned with mint and clementine are something spectacular, perfect as starter in a Christmas dinner.

Ingredients:

1 high quality piece of duck from Avesa

2 cm piece of ginger

1 ts spice powder

A pinch of cinnamon

4 clementines

½ a bunch of fresh mint

1 pomegranate

 

For lemon and chilli dressing

1-2 fresh red chillies

3 tbsp extra virgin olive oil

1-2 red chillies

 

Elaboration:

1. Preheat the oven to 190ºC and season the duck well with sea salt and black pepper.

2. Rub the ginger over the duck and add the spices.

3. Place the duck in a roasting tray and cook in the oven for about 2 hours.

4. Allow to cool a little and shred the meat into a bowl and set aside.

5. Peel the clementines, slice and add to a separate bowl along with the mint leaves. Tap the seeds out from the pomegranate and add those too.

6. Chop the chillies and place it in a jar with the oil and lemon juice. Shake it.

7. Mix some warm duck with the fruit mixture and drizzle with a little dressing. Put it in a forks.
