Rib stew with mushrooms

Ingredients:

1.5 kg. rib of beef

300 gr. shitake mushrooms

2 carrots

1 onion

1 leek

1 stick of celery

2 cloves of garlic

200 ml. of red wine

1 litre of broth

1/2 litre of broth of vegetables

3 sprigs of parsley

10 gr. dark chocolate

Olive oil, salt and black pepper

 

Elaboration:

Preheat the oven at 130 °. Season the ribs and sauté them in a pan with oil. Retired them and add the vegetables along with the parsley and cook for 5 minutes. Add the wine until reduce and add the ribs. Cover and introduce them into the oven for about three hours until the meat falls off the bone.

Remove it from the oven and let cool to be able to chop up the ribs. Strain the broth and remove all the vegetables and fat. Put it to the fire so the sauce reduces.

Sauté the mushrooms in a pan and salt them. Add parsley. On the other hand, we remove the sauce from the fire and add the chocolate, stirring well.

Place the mushrooms in the dish and put the meat over, take a bit of sauce and voila!
