We recommend you to buy the meat without any fat on top.
Start preparing a kind of lattice on the top of duck, giving it diagonal cuts in both directions, it is important to not make these cuts very deep.

Put a pan to heat without any oil, and after it put the duck breast with skin directly, let it start cooking. Every two minutes, remove all the fat from the pan that comes from the peace of meat. The heat must be low, we need a slow cook.

Every 10 minutes we will have to remove the grease from the meat that left in the pan. Once, when you see it is browned and when you see that there is almost not fat on the pan, turn off the heat and turn the piece of meat so that the other side can also be cooked
Leave the duck breast for about ten minutes before cutting and serving.
To make the sauce of pears, peel the pears and cut them into slices. In a saucepan we put a Little bit of olive oil and a small onion and poach it all together, until they are golden brown. Add a little bit of meat juice and crush until it became a sauce.
