Typical Mallorcan Fried with Lamb

Ingredients:

First of all we will need 700 gr. of lamb offal cut into cubes

And also:
• 1/2 bunch of chives and garlic head squashed and peeled

• 2 dl. Olive oil

• 2 red peppers cut into cubes

• 1 large onion, chopped

• 0.5 kg. Diced potato

• 200 gr. with tender beans chopped

• 50 gr. of chopped green beans

• 50 gr. peas

• 3 bay leaves

• A sprig of fresh fennel

• Season with salt, freshly ground pepper and a little paprika

Preparation:

Heat a pan with half quantity of oil, cook the garlic over low heat, add the clean offal, giving strength to the heat and cook it for 10 minutes, moving it occasionally.

Put and save it in a separate recipient. In the same pan with the remaining oil fry the onion and add the bay leaf, until it is sweaty, after it add a little bit of salt and set aside with the lamb. Fry with a little bit of oil the broad beans, the peas, beans and the red pepper, fry everything. Add the lamb and the onion already cooked before, season it, add the potatoes and the remaining ingredients, and finally the chopped fennel.
