Lamb Skewers

Ingredients

1. Garlic cloves, peeled
2. Sea salt
3. Freshly ground black pepper
4. one teaspoon dried oregano
5.  Olive oil
6. Four lamb steaks, (roughly 750g in total) cut into 3cm chunks
7. Two red peppers, deseeded and cut into chunks
8. Eight fresh bay leaves
9. Two lemons, cut into wedges

How to make it:
Fire up the oven an hour or so before you're ready to cook. When the temperature has reached 200°C and the smoke and flames have died down, you can start cooking.
Peel and bash the garlic with a generous pinch of salt in a pestle and mortar, then add the dried oregano and enough oil to loosen the mixture, then season with salt and pepper. Place the lamb in a large bowl, add the marinade, and toss to coat.
