Beef carpaccio rolls with pistachio vinagrette

INGREDIENTS
300 g of sliced beef
1 handful of pistachios
1 handful of arugula
1 tomato
100 g of Parmesan cheese
Extra virgin olive oil
Balsamic vinegar of Modena
Flake salt
Pepper

Peel a tomato and dice it.
Mix with 100 g of knife-chopped Parmesan cheese and a handful of arugula.
Season with salt flakes, pepper and virgin olive oil.
Put this mixture on the beef slices and roll them up.
Serve on a bed of arugula and sauce with the vinaigrette that we will have prepared with a handful of chopped pistachios, extra virgin olive oil and balsamic vinegar of Modena.
