Meatballs in coconut sauce and curry

Ingredients (4 pers)

Minced meat (pork, 500 gr.)

Curry (2 tablespoons)

Coconut milk (200 ml)

Onion (1)

Garlic (2 cloves)

Fish sauce (2 tablespoons)

Corn (100 gr.)

Extra virgin olive oil

Salt

Black pepper

Coriander (to garnish)

Place the coconut milk in the blender glass and add the curry. Crush well with the help of the hand blender until well mixed.

Place the minced meat in a bowl and add salt, freshly ground black pepper and fish sauce. Knead well with your hands and form balls. Reservation.

Peel the onion and chop it in finite brunoise, that is, in small cubes. Peel the garlic, cut it in half to remove the germ and chop it too often.

Pour the onion and chopped garlic at the bottom of a baking dish and water with a drizzle of olive oil. Place the meatballs on top and cover with the coconut milk and curry sauce. Also add the sweet corn drained well of preservative liquid. Finally, incorporate rolled almonds.

Put the tray in the oven, which should already be preheated to 180 ° C and bake for about 30 minutes. For the first 15 or 20 minutes, use only heat below or cover the fountain with foil so that the almonds are not burned.
