Ingredients
1 kg of pork sirloin
1 fennel bulb
3 spring onions
3 cloves of garlic
2 lemons
125 ml of dry white wine
200 gr extra virgin olive oil
Olives
Salt
Jamaica pepper
Fresh parsley
Elaboration:
Cut the sirloin in cubes and put them in a bowl with salt, oil and the peel of a lemon. Let stand on the fridge around 2 hours. Cut the fennel and the spring onions in strips.
Add oil in a pan and cook the fennel and the onion. Peel a lemon and cut this peel in strips.
Add the peel and cook everything together a few minutes. Add the sirloin and cook two min. Finally add the white wine and the olives.
Cook it 20 minutes and serve with a parsley on top.
