Meatloaf

Ingredients (4 pax)
Minced meat (600 gr)
Bacon or bacon (150 gr)
Eggs (2 buds)
Whole almond (50 gr)
Potatoes (2 pcs)
Chive (1 unit)
Mold bread (2 slices)
Curry (1 teaspoon)
Unez moscada
Milk (140 ml)
Extra virgin olive oil
Salt
Black pepper


The first thing to do is preheat the oven to 180 ° C, so it will be at the right temperature to bake the meatloaf when the time comes to put it.
Put a saucepan with plenty of water on the fire. Peel the potatoes and cook them in the saucepan until they are soft, which will take about 30 minutes.
Cut the bacon into pieces and save it. Next, soak the bread with the milk and let it rest for a few minutes so that it is well impregnated. Finally, peel the onion and cut it into not very large pieces.
Put the cooked potato in a large bowl and the bread soaked in milk. Smash the mixture with a fork. Then add the chopped scallions, the pieces of bacon and the minced meat.
Shell the eggs and separate the whites from the yolks. The easiest way to do it is to slide the egg between the slightly open fingers of your hands: the yolk will be collected while the white one slides towards the container that you have prepared underneath. Save the whites for another preparation, beat the yolks and pour them over the meat.
Add to the bowl of the meat, the almonds, the curry, the nutmeg, salt and pepper. Stir well so that all the ingredients are mixed in a homogeneous way.
Grease a mold with extra virgin olive oil and dump the previous mixture inside. Stretch it until it has a compact appearance and put it in the oven for about 30 minutes or until the surface is golden brown and made and juicy inside. Remove from the oven.
